4-6 Cooked Chicken Breasts shredded
Place in crockpot or big kettle.  Add to pot
1 Onion, chopped
1 Green Pepper, chopped
1 Pkg Sliced Mushrooms
2 Cans Black Olives
1 lg. can diced tomatoes
Set aside
In a fry pan add
1/4 c. butter
1/2 c. flour
Melt butter and flour to make a roux.  Cook mixture 1-2 minutes, add
1 lg. can tomatoe sauce
1 c. chicken stock
1 t. dried basil
1 t. dried oregano
2 whole roasted garlic or 1 t. chopped garlic cloves
salt and pepper to taste
Cook and stir until you get a gravy consistency. I use a hand blender to make sure there are no lumps. If you need more liquid add tomatoe sauce.
Pour over chicken and vegetables. Cover and bake. (The longer the better.)250 degrees for a least 2 hour in oven or low in crockpot 4-6 hours. Serve over rice or pasta.

Enchillada Soup

This recipe is so delish!! Honest it is to D-I-E for!! Well if you like Mexican!
1 - 15 oz can of black beans rinsed and drained

1- 14 1/2 oz can of diced tomatoes (the kind with onions r the best!)

1- 10oz bag of frozen corn

1/2 cup chopped onion

1/2 cup chopped red green or yellow pepper. I use red cause it matches!

1- 10 oz jar of enchillada sauce (red)

1 - 10.75 oz can condensed cream of chicken soup

1 1/2 cups milk

1 cup shredded Pepper jack cheese

2 chicken breast
In crock pot put the beans, tomatoes, corn, onion and peppers. Place on top of that 2 raw chicken breast. In a bowl mix the enchillada sauce and soup. Slowly add the milk. Pour the enchillada sauce mix over the other ingredients in your crock pot and cook on low for 6-8 hours for high for 3-4 hours. Take out the chicken and shred it and then put it back in the slow cooker until you are ready to serve. Top with the grated cheese and if you want ( which I always do) crushed tortilla chips. I also put sour cream on top! SO GOOD!

Enjoy!!

"I Baked" French Bread Secret

My family loves hot french bread from the oven.
You can buy the frozen loaves by the case at Sam's club.
I usually share a case with someone as 1/2 a case lasts just
the right amount of time at our house.
You just get out 2 sticks of the dough and let them rise on
a cookie sheet. Maybe 5 hours... If I need it sooner I turn
on my oven to 200 then turn it off and put the bread in with
a bowl of hot water and it is ready in an hour or two. I take
It out to preheat the oven to 375.
Bake at 375 for about 25 minutes or until golden. MMM.

Catalina Chicken

1 cup Peach or Apricot Jelly
1 1/2 cup Catalina Salad Dressing

Mix together and set aside. (enough for a 9 x 13 pan)

Shake & Bake Chicken Flavor (amount depends on how much chicken you use)
1-2 packages of Lipton Onion Soup Mix

Mix together in Shake and Bake bag and then coat boneless-skinless chicken. Put chicken in a 9 x 13 pan (I like to use Pam so it doesn't have such a tough clean-up) until pan is full (or you have enough for your family).  Pour the dressing mixture over the top ensuring there is a sufficient amount (I use the entire dressing).  Bake at 350° F for 40-45 minutes.  Enjoy!
